Phosphates - Complexing agent and acidity regulator
Phosphates are the derivatives of phosphoric acid and are used in particular as an acidity regulator, complexing agent, and melting salt. They regulate the acidity of foods and increase the effect of gelling and thickening agents by binding iron, magnesium, calcium and heavy metal ions in solid complexes. Their complex-forming properties can also relax the structures of proteins and thus stimulate their water retention.
